Strawberry Hugo
One ripe berry, not a purée. Elderflower stays in the background.

Ingredients & ratios
Strawberry, mint, and prosecco. · 1 drink
- 1Ripe strawberry, sliced
- 15 mlElderflower cordial
- 90 mlProsecco, chilled
- 30 mlSoda water, chilled
- 1 sprigFresh mint
- 1Lime wedge
Steps
Build it in a wine glass.
- 1Lightly press the strawberry in the glass with the cordial. Stop before it turns to jam.
- 2Add ice, prosecco, and soda.
- 3Garnish with mint and the lime wedge.

Strawberry and elderflower agree with each other until the berry takes over. One fruit, pressed, is the whole point. A handful of berries makes a smoothie with wine in it.
Use this at brunch or in the garden. It is sweeter than a plain Hugo, so keep the prosecco brut.
