Peach Hugo
Elderflower and peach, kept short so the prosecco still shows.

Ingredients & ratios
Peach, flowers, and bubbles. · 1 drink
- 2 slicesRipe peach
- 15 mlElderflower cordial
- 90 mlProsecco, chilled
- 20 mlSoda water, chilled
- 1 sprigFresh mint
Steps
Build it in a wine glass.
- 1Put the peach slices and cordial in the glass.
- 2Add ice and prosecco.
- 3Top with a short soda splash and mint.

Peach cordial plus elderflower cordial is too much sugar. Use the fruit, a small elderflower measure, and brut prosecco. If the peach is underripe, this will taste like leaves. Wait, or make a plain Hugo.
Next to grilled food it works because the fruit is fresh, not because the drink is strong. For a bitter glass at a barbecue, use the grapefruit spritz or a Campari-style spritz.
