  • 20 mlElderflower syrup
  • 30 mlSoda water, chilled
  • 8 leavesFresh mint
  • 1Lemon wheel

Steps

Build it in a wine glass.

The short house Hugo is floral on purpose. This tall glass is what to pour when you want to taste the wine. Brut prosecco, a tablespoon of syrup, and a modest soda splash.

Lemon stands in for lime here because it is a little quieter next to a larger pour of prosecco. If the syrup you bought is very sweet, drop it to 15 ml before you add more.
